Pantry Raid Chicken Enchilada Casserole



Do you ever find yourself with a pantry full of random ingredients and no idea what to make? I know I do! That's why I love this recipe for Pantry Raid Chicken Enchilada Casserole. It's a simple, yet delicious dish that can be made with whatever you have on hand.

Here's what you'll need:

  • 1 (15 ounce) can tomato sauce

  • 1/4 cup water

  • 1 envelope taco seasoning mix

  • 1 1/2 tablespoons chili powder

  • 1 tablespoon vegetable oil

  • 1 pound chicken breast, cooked and shredded

  • 1 (15 ounce) can black beans, drained and rinsed

  • 1/4 cup cream cheese, softened

  • 1 cup shredded Mexican-style cheese

  • 1 (7.5 ounce) package corn bread mix

  • 1 egg

  • 1/3 cup milk

Preheat oven to 375 degrees F (190 degrees C). Grease a 9x9 inch baking dish.

In a medium saucepan, combine tomato sauce, water, taco seasoning mix, and chili powder. Bring to a simmer over medium heat, stirring occasionally.

In a large bowl, combine chicken, black beans, cream cheese, and 1/2 cup of the shredded cheese. Stir until well combined.

In a small bowl, whisk together corn bread mix, egg, and milk. Pour over the chicken mixture and stir until well combined.

Pour the chicken mixture into the prepared baking dish. Sprinkle with the remaining shredded cheese.

Bake for 20-25 minutes, or until the cheese is melted and bubbly. Serve hot.

Tips and Tricks

  • If you don't have any taco seasoning mix on hand, you can substitute 1 teaspoon of ground cumin, 1/2 teaspoon of chili powder, 1/4 teaspoon of garlic powder, and 1/4 teaspoon of onion powder.

  • You can use any type of shredded cheese you like. I like to use a mix of cheddar and Monterey Jack cheese.

  • If you want a spicier casserole, add an extra 1/2 teaspoon of chili powder.

  • This casserole is also great for meal prepping. Make it ahead of time and store it in the refrigerator for up to 3 days. When you're ready to eat, simply reheat it in the oven or microwave.
