Ingredients:
4 large bell peppers (any color)
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced

Instructions:
Preheat oven to 350 degrees F (175 degrees C).
Cut the tops off the bell peppers and remove the seeds and membranes.
In a large skillet, brown the ground beef over medium heat. Drain off any excess fat.
Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
Stir in the tomato sauce, rice, and cheese. Season with salt and pepper to taste.
Stuff the bell peppers with the beef mixture.
Place the stuffed peppers in a baking dish and bake for 20 minutes, or until the peppers are tender and the cheese is melted.
Serve hot.
Tips:
For a vegetarian version, use ground turkey or lentils instead of ground beef.
To make the stuffed peppers ahead of time, assemble them up to step 6 and then refrigerate. When you are ready to bake, remove the stuffed peppers from the refrigerator and let them sit at room temperature for 30 minutes before baking.
To add a little extra flavor, you can add a teaspoon of chili powder or cumin to the beef mixture.
