Big Easy Gumbo

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the sausage and cook until browned. Remove the sausage from the pot and set aside.

  2. Add the chicken to the pot and cook until browned on all sides. Remove the chicken from the pot and set aside.

  3. Add the onion, celery, and bell pepper to the pot and cook until softened.

  4. Add the tomatoes, okra, thyme, cayenne pepper, bay leaf, and parsley to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.

  5. Add the chicken, sausage, chicken broth, and water to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chicken is cooked through.

  6. Season with salt and pepper to taste. Serve over rice or with a side of bread.

Tips

  • For a thicker gumbo, add 1/4 cup of cornstarch to the pot and whisk until dissolved.

  • For a spicier gumbo, add more cayenne pepper to taste.
