Buckley's Cajun Salmon Pasta is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is made with salmon, pasta, Cajun seasoning, and a variety of other ingredients that give it a flavorful and satisfying taste.
Ingredients
1 pound salmon fillet, skin on
1 pound pasta
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 clove garlic, minced
1 teaspoon Cajun seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chicken broth
1/2 cup heavy cream
1/4 cup chopped fresh parsley
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Cook pasta according to package directions.
While pasta is cooking, heat olive oil in a large skillet over medium heat.
Add onion, bell peppers, and garlic to the skillet and cook until softened, about 5 minutes.
Add Cajun seasoning, salt, and pepper to the skillet and cook for 1 minute more.
Add chicken broth and cream to the skillet and bring to a boil.
Reduce heat to low and simmer for 5 minutes.
Remove salmon fillet from the skin and place it in the skillet with the sauce.
Bake in preheated oven for 15 minutes, or until salmon is cooked through.
Remove salmon from the oven and flake it with a fork.
Add pasta to the skillet with the sauce and salmon and toss to combine.
Sprinkle with parsley and serve immediately.
Tips
For a spicier dish, add more Cajun seasoning to taste.
For a healthier dish, use whole-wheat pasta and low-fat or fat-free chicken broth.
To make ahead, prepare the dish up to step 9 and then cover and refrigerate for up to 24 hours. When ready to serve, remove from the refrigerator and let sit at room temperature for 30 minutes. Bake in a preheated oven at 400 degrees F (200 degrees C) for 15 minutes, or until heated through.
