California Roll Salad

California Roll Salad is a delicious and refreshing twist on the classic California roll. It is made with a variety of fresh ingredients, including avocado, cucumber, crab meat, and imitation crab meat. The salad is tossed in a light and flavorful dressing, and it is perfect for a light lunch or dinner.

Ingredients

  • 1 head of romaine lettuce, chopped

  • 1 cucumber, peeled and sliced

  • 1 avocado, sliced

  • 1 can (6 ounces) imitation crab meat, drained

  • 1 can (6 ounces) real crab meat, drained

  • 1/2 cup mayonnaise

  • 1/4 cup rice vinegar

  • 1 tablespoon sugar

  • 1 teaspoon sesame oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine lettuce, cucumber, avocado, imitation crab meat, and real crab meat.

  2. In a small bowl, whisk together mayonnaise, rice vinegar, sugar, sesame oil, salt, and pepper.

  3. Pour dressing over salad and toss to coat.

  4. Serve immediately.

Tips

  • For a more authentic flavor, use sushi rice instead of regular rice.

  • To make the salad ahead of time, prepare the salad and dressing as directed. Cover and refrigerate for up to 24 hours. When ready to serve, toss the salad to coat with the dressing.

  • To make the salad vegan, omit the imitation crab meat and use only real crab meat.

Enjoy!

Here is a story about how I came up with the California Roll Salad recipe:

I was craving a California roll, but I didn't have any sushi rice on hand. I decided to try making a California Roll Salad instead, and I was so glad I did! The salad was delicious and refreshing, and it was the perfect way to satisfy my craving for sushi.

I've made the California Roll Salad several times since then, and it's always a hit with my family and friends. It's a great dish to serve for a light lunch or dinner, and it's also perfect for potlucks and picnics.

I hope you enjoy this recipe as much as I do!
