Cheeseburger Meatloaf for Lactose Intolerant Cheese

Ingredients

  • 1 pound ground beef

  • 1 cup gluten-free breadcrumbs

  • 2 eggs, beaten

  • 1 tablespoon Worcestershire sauce

  • 1/2 cup chopped onion

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.

  2. In a large bowl, combine ground beef, breadcrumbs, eggs, ketchup, Worcestershire sauce, Dijon mustard, onion, and pickles. Mix well.

  3. Transfer meatloaf mixture to the prepared loaf pan.

  4. Bake in preheated oven for 1 hour, or until a meat thermometer inserted into the center registers 160 degrees F (71 degrees C).

  5. Remove from oven and let cool slightly.

  6. Top with cheese and bake for an additional 5 minutes, or until cheese is melted and bubbly.

  7. Serve immediately.

Tips

  • For a spicier meatloaf, add 1/4 teaspoon of cayenne pepper to the mixture.

  • For a healthier meatloaf, use ground turkey or chicken instead of ground beef.

  • To make ahead, prepare the meatloaf mixture and bake it in a greased 9x13 inch baking dish. Cover and refrigerate for up to 24 hours. When ready to bake, remove from the refrigerator and let sit at room temperature for 30 minutes.
