Cheesy potatoes are a classic comfort food that is perfect for any occasion. They are easy to make and can be customized to your liking. This recipe is for a basic cheesy potatoes dish, but you can add your favorite toppings, such as bacon, chives, or sour cream.
Ingredients
2 pounds russet potatoes, peeled and diced
1/2 cup butter
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups milk
2 cups shredded cheddar cheese
1/2 cup chopped onion
1/4 cup chopped green bell pepper
Instructions
Preheat oven to 350 degrees F (175 degrees C).
Grease a 9x13 inch baking dish.
In a large pot, combine potatoes and water to cover. Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender. Drain.
In a large saucepan, melt butter over medium heat. Whisk in flour, salt, and pepper. Gradually whisk in milk until smooth. Bring to a boil, then reduce heat and simmer for 5 minutes, or until thickened. Stir in cheese until melted.
Add potatoes, onion, and green bell pepper to the cheese sauce. Stir to combine.
Pour potato mixture into the prepared baking dish.
Bake for 20 minutes, or until heated through and bubbly.
Serve immediately.
Tips
For a richer flavor, use half-and-half or heavy cream instead of milk.
To make ahead, prepare the potato mixture as directed and cover and refrigerate for up to 24 hours. When ready to bake, preheat oven to 350 degrees F (175 degrees C). Pour potato mixture into a greased 9x13 inch baking dish and bake for 20 minutes, or until heated through and bubbly.
To make vegan, use vegan butter, milk, and cheese.
