French Onion Soup

 


French onion soup is a classic French dish that is made with caramelized onions, beef broth, and Gruyère cheese. It is a hearty and comforting soup that is perfect for a cold winter day.

Ingredients:

  • 1 tablespoon olive oil

  • 6 large yellow onions, thinly sliced

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 8 cups beef broth

  • 1/2 cup dry white wine

  • 1 bay leaf

  • 1 sprig of thyme

  • 8 slices French bread

  • 1 cup Gruyère cheese, shredded

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onions and cook, stirring occasionally, until they are soft and translucent, about 10 minutes.

  2. Add the sugar, salt, and pepper and cook, stirring occasionally, for 10 minutes more, or until the onions are golden brown and caramelized.

  3. Add the beef broth, wine, bay leaf, and thyme to the pot and bring to a boil. Reduce the heat to low and simmer for 30 minutes, or until the flavors have melded.

  4. Preheat the broiler to high.

  5. Place a slice of bread in each of 8 oven-safe bowls. Ladle the soup over the bread and top with the Gruyère cheese.

  6. Broil the soup for 2-3 minutes, or until the cheese is melted and bubbly.

  7. Serve immediately.

Tips:

  • For a more flavorful soup, use beef broth that has been simmered with bones and vegetables.

  • If you don't have dry white wine, you can use chicken broth or water.

  • If you don't have Gruyère cheese, you can use any type of hard cheese, such as cheddar, Swiss, or Parmesan.

  • To make the soup ahead of time, prepare the soup through step 5 and then let it cool completely. Cover and refrigerate for up to 2 days. When you are ready to serve, reheat the soup over low heat until it is warmed through. Broil the soup with the cheese just before serving.
