Golden Circle Pineapple Upside Down Cake

Ingredients:

  • 1 can (20 ounces) pineapple rings, drained

  • 1/4 cup butter

  • 1/2 cup brown sugar

  • 1/4 cup maraschino cherries, halved

  • 1 cup all-purpose flour

  • 1/2 cup granulated sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 egg

  • 1/2 cup milk

  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9-inch round cake pan.

  2. Arrange pineapple rings in the bottom of the prepared pan.

  3. In a medium saucepan, melt butter over medium heat. Stir in brown sugar until melted and smooth. Pour over the pineapple rings.

  4. Sprinkle with maraschino cherries.

  5. In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.

  6. In a separate bowl, whisk together egg, milk, and vanilla extract.

  7. Add the wet ingredients to the dry ingredients and whisk until just combined.

  8. Pour batter over the pineapple and cherries.

  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  10. Let cool in pan for 10 minutes before inverting onto a serving plate.

Tips:

  • For a richer flavor, use dark brown sugar.

  • If you don't have maraschino cherries, you can use any type of chopped dried fruit, such as apricots, figs, or dates.

  • To make the cake ahead of time, bake it in a greased and floured 9x13 inch baking dish. After it cools, cover it tightly with plastic wrap and refrigerate for up to 2 days. When you're ready to serve, let the cake come to room temperature for about 30 minutes before inverting it onto a serving plate.

Story:

I first made Golden Circle Pineapple Upside Down Cake when I was a kid. My mom would make it for special occasions, and I always looked forward to it. The combination of the sweet pineapple, the caramelized brown sugar, and the fluffy cake was simply irresistible.

As I got older, I started making the cake myself. I've experimented with different variations over the years, but I always come back to the original recipe. It's just the perfect combination of flavors and textures.

If you're looking for a delicious and easy dessert to make, I highly recommend trying Golden Circle Pineapple Upside Down Cake. It's sure to become a new favorite!

Personalization:

I love to add my own personal touch to Golden Circle Pineapple Upside Down Cake. Sometimes I'll add a splash of rum to the batter for a bit of extra flavor. Other times I'll top the cake with some whipped cream and a cherry.

I also like to experiment with different types of pineapple. Sometimes I'll use fresh pineapple, but I also like to use canned pineapple rings. I find that the canned pineapple rings give the cake a more intense pineapple flavor.

No matter how you make it, Golden Circle Pineapple Upside Down Cake is always a hit. So next time you're looking for a delicious and easy dessert to make, be sure to give it a try!
