  • 1 (12 ounce) can refrigerated biscuits

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the beef stew meat and cook until browned on all sides.

  2. Add the onion, carrots, celery, thyme, rosemary, salt, and pepper to the pot. Cook until the vegetables are softened, about 5 minutes.

  3. Stir in the beef broth, tomato soup, peas, corn, and water. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the beef is tender.

  4. While the stew is simmering, preheat the oven to 400 degrees F (200 degrees C).

  5. Separate the biscuits into 10 pieces. Roll each piece of dough into a ball and place on top of the stew.

  6. Bake for 15 minutes, or until the biscuits are golden brown.

  7. Serve immediately.

Tips:

  • For a richer flavor, use beef broth that has been simmered with beef bones.

  • If you don't have thyme or rosemary, you can use 1 teaspoon of dried oregano instead.

  • If you don't have frozen peas or corn, you can use fresh vegetables. Just be sure to cook them until they are tender before adding them to the stew.

  • If you don't have refrigerated biscuits, you can use any type of biscuit. Just be sure to bake them according to the package directions.
