Instructions:

In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
Remove from heat and stir in flour all at once. Beat vigorously with a wooden spoon until smooth and glossy.
Beat in eggs one at a time, beating well after each addition.
Drop by rounded tablespoons onto ungreased baking sheets.
Bake for 20-25 minutes, or until golden brown.
Let cool completely.
To make the pastry cream, heat milk in a saucepan over medium heat.
In a bowl, whisk together egg yolks, sugar, and cornstarch.
Gradually whisk in hot milk until smooth.
Return mixture to saucepan and cook over medium heat, stirring constantly, until thickened.
Remove from heat and stir in vanilla extract.
Cover and chill.
To assemble, split cream puffs in half and fill with pastry cream.
Top with whipped cream and powdered sugar.
Serve immediately.
Tips:
For a richer flavor, use whole milk instead of skim milk.
If you don't have pastry cream, you can use store-bought pastry cream.
If you don't have whipped cream, you can use store-bought whipped cream.
