I've never been a fan of Miracle Whip. I think it tastes too sweet and artificial. But I do love potato salad. So when I found this recipe for potato salad that doesn't use Miracle Whip, I was intrigued.
The recipe is from my friend, Sarah. She's a great cook, and I knew that if she said this potato salad was good, it had to be good.
I was not disappointed. This potato salad is delicious! It's creamy and flavorful, and it doesn't have that artificial taste that I hate about Miracle Whip.
The secret to this potato salad is the mayonnaise. Sarah uses Duke's mayonnaise, which is a much higher quality mayonnaise than Miracle Whip. Duke's mayonnaise has a richer, more flavorful taste that really elevates this potato salad.
Sarah also uses a few other ingredients that I love in potato salad, like hard-boiled eggs, bacon, and dill. The combination of these ingredients creates a potato salad that is both hearty and flavorful.

Ingredients:
6 large russet potatoes, scrubbed and quartered
1/2 cup mayonnaise
1/4 cup Dijon mustard
1/4 cup apple cider vinegar
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped dill
1/4 cup chopped hard-boiled eggs
1/4 cup bacon, cooked and crumbled
Salt and pepper to taste
Instructions:
Place the potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce heat to low and simmer for 20 minutes, or until the potatoes are tender. Drain and let cool slightly.
In a large bowl, combine the mayonnaise, mustard, vinegar, onion, celery, dill, eggs, and bacon. Season with salt and pepper to taste.
Add the potatoes to the bowl and gently stir to combine.
Cover and chill for at least 2 hours before serving.
Tips:
For a more flavorful potato salad, use Yukon Gold potatoes instead of russet potatoes. Yukon Gold potatoes have a slightly sweeter flavor that pairs well with the other ingredients in this salad.
If you don't have Dijon mustard, you can use regular yellow mustard. Just be sure to use a good quality mustard, as the flavor will make a big difference in the final dish.
If you don't have dill, you can use another herb, such as parsley or chives.
For a more hearty potato salad, add some chopped cooked vegetables, such as carrots, peas, or corn.
For a more flavorful potato salad, add some chopped cooked meat, such as chicken, beef, or sausage.
This potato salad can be made ahead of time and stored in the refrigerator for up to 3 days.
