Impossible Bisquick Spinach Feta Pie

I love pie. I love the flaky crust, the creamy filling, and the sweet or savory flavors. But sometimes, I don't have the time or energy to make a traditional pie. That's when I turn to this impossible bisquick spinach feta pie recipe.

This pie is quick and easy to make, and it's just as delicious as a traditional pie. The bisquick crust is flaky and buttery, the spinach is flavorful and tender, and the feta cheese adds a salty, tangy flavor.

This pie is perfect for a weeknight meal or a potluck. It's also great for lunch or dinner. And it's even better the next day, so you can make it ahead of time and save yourself some time.

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry

  • 1/2 cup crumbled feta cheese

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup chopped fresh parsley

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. In a medium bowl, combine Bisquick, butter, and milk until a dough forms.

  3. Press dough into a 9-inch pie plate.

  4. In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

  5. Add spinach and cook until heated through, about 2 minutes.

  6. Stir in feta cheese, Parmesan cheese, parsley, salt, and pepper.

  7. Pour spinach mixture into prepared pie crust.

  8. Bake in preheated oven for 20 minutes, or until crust is golden brown and filling is bubbly.

  9. Let cool slightly before serving.

Tips:

  • For a more flavorful crust, add 1/4 teaspoon of garlic powder and 1/4 teaspoon of onion powder to the Bisquick mixture.

  • If you don't have fresh parsley, you can use 1 teaspoon of dried parsley.

  • For a spicier pie, add 1/4 teaspoon of red pepper flakes to the spinach mixture.

  • This pie can be made ahead of time and baked later. Just wrap it tightly in plastic wrap and refrigerate for up to 24 hours. When you're ready to bake, remove it from the refrigerator and let it sit at room temperature for 30 minutes before baking.
