It Smells Like Christmas Pumpkin Bread

 



There's nothing quite like the smell of freshly baked pumpkin bread wafting through the house on a cold winter day. It's the perfect way to warm up and get into the Christmas spirit. This recipe is my favorite for pumpkin bread, and it's always a hit with my family and friends.

Ingredients:

  • 3 ½ cups sifted all-purpose flour

  • 2 teaspoons baking soda

  • 1 ½ teaspoon salt

  • 1 teaspoon baking powder

  • 2 teaspoons cinnamon

  • 2 teaspoons nutmeg

  • 1 teaspoon allspice (optional)

  • ½ teaspoon ground cloves

  • 3 cups sugar

  • 2⁄3 cup water

  • 1 cup oil

  • 5 eggs, beaten

  • 1 (15 ounce) can pumpkin (not pie filling)

  • 1 cup chopped pecans (optional)

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.

  2. In a large bowl, combine flour, baking soda, salt, baking powder, cinnamon, nutmeg, allspice, and cloves.

  3. In a separate bowl, cream together sugar and oil. Beat in eggs one at a time, then stir in pumpkin.

  4. Add dry ingredients to wet ingredients alternately with water, beating just until combined. Stir in pecans, if desired.

  5. Pour batter into prepared loaf pan and bake for 1 hour, or until a toothpick inserted into the center comes out clean.

  6. Cool in pan for 10 minutes before removing to a wire rack to cool completely.

Tips:

  • For a richer flavor, use brown sugar instead of white sugar.

  • Add 1/2 cup of chocolate chips for a chocolate-pumpkin twist.

  • Top with a glaze made by whisking together 1 cup of powdered sugar, 1/4 cup of milk, and 1 teaspoon of vanilla extract.
