Jamaican Me Hungry Chicken Bake



Jamaican chicken bake is a delicious and easy-to-make dish that is perfect for a weeknight meal. This recipe is full of flavor, with a blend of Jamaican spices that will leave you wanting more.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ground ginger

  • 1 teaspoon ground allspice

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 (14.5 ounce) can diced tomatoes, undrained

  • 1 (10.75 ounce) can condensed tomato soup

  • 1/2 cup water

  • 1/2 cup brown rice

  • 1/2 cup shredded cheddar cheese

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. In a large skillet, heat olive oil over medium heat.

  3. Add chicken and cook until browned on all sides.

  4. Remove chicken from skillet and set aside.

  5. Add onion and garlic to skillet and cook until softened.

  6. Add ginger, allspice, cinnamon, nutmeg, salt, and pepper to skillet and cook for 1 minute more.

  7. Stir in tomatoes, tomato soup, and water.

  8. Bring to a boil, then reduce heat to low and simmer for 10 minutes.

  9. Stir in rice and chicken.

  10. Pour mixture into a greased 9x13 inch baking dish.

  11. Sprinkle with cheddar cheese.

  12. Bake for 30 minutes, or until chicken is cooked through and rice is tender.

  13. Serve hot.

Tips:

  • For a spicier dish, add a habanero pepper to the skillet with the onion and garlic.

  • To make this dish ahead of time, prepare the dish up to step 10 and then cover and refrigerate for up to 24 hours. When you're ready to cook, remove the dish from the refrigerator and let it sit at room temperature for 30 minutes before baking.

  • Serve this dish with your favorite sides, such as rice and peas, plantains, or salad.
