Laings English Pickled Onions Copycat

Laings English Pickled Onions are a classic British condiment that are loved by many. They are made with a simple mixture of onions, vinegar, sugar, and spices, but they have a complex and delicious flavor.

I love Laings English Pickled Onions, but they can be expensive to buy. So, I decided to make my own copycat recipe. This recipe is easy to make and it tastes just like the real thing.

Ingredients:

  • 1 pound pearl onions, peeled

  • 1 cup white vinegar

  • 1/2 cup sugar

  • 1 tablespoon salt

  • 1 teaspoon black peppercorns

  • 1 teaspoon mustard seeds

  • 1/2 teaspoon coriander seeds

  • 1 bay leaf

Instructions:

  1. In a large saucepan, combine the vinegar, sugar, salt, peppercorns, mustard seeds, coriander seeds, and bay leaf. Bring to a boil over medium heat, stirring until the sugar is dissolved.

  2. Reduce heat to low and simmer for 5 minutes.

  3. Add the onions to the saucepan and bring back to a boil. Reduce heat to low and simmer for 5 minutes, or until the onions are tender.

  4. Remove the onions from the saucepan and let cool slightly.

  5. Pack the onions into sterilized jars, leaving 1/2 inch of headspace.

  6. Pour the pickling liquid over the onions, filling the jars to the top.

  7. Seal the jars tightly and let cool completely.

  8. The onions will be ready to eat in 2 weeks, but they will taste better if they are allowed to sit for at least 1 month.

Tips:

  • For a spicier pickle, add 1/2 teaspoon of cayenne pepper to the pickling liquid.

  • To make ahead, prepare the onions up to step 5 and store in the refrigerator for up to 2 weeks. When ready to serve, bring to room temperature and let sit for 30 minutes before opening the jars.

  • Laings English Pickled Onions can be enjoyed on their own, or they can be used to add flavor to sandwiches, burgers, and salads.

Story:

I first tried Laings English Pickled Onions when I was in college. I was at a party, and someone had brought a jar of them. I took a bite, and I was hooked! The onions were so flavorful and tart, and they were the perfect addition to the party food.

I started buying Laings English Pickled Onions whenever I could find them, but they were always expensive. So, I decided to make my own. This recipe is so easy to make, and it tastes just like the real thing. I now make my own Laings English Pickled Onions all the time, and I love sharing them with my friends and family.

I hope you enjoy this recipe as much as I do!
