Leftover Lo Mein for Two



Lo mein is a classic Chinese dish that is made with noodles, vegetables, and meat. It is a popular dish for takeout, but it can also be easily made at home.

If you have leftover lo mein, don't throw it away! You can easily turn it into a new and delicious dish. Here is a recipe for Leftover Lo Mein for Two:

Ingredients:

  • 1 cup leftover lo mein noodles

  • 1 tablespoon vegetable oil

  • 1/2 onion, chopped

  • 1 carrot, chopped

  • 1 cup broccoli florets

  • 1/2 cup snow peas

  • 1/4 cup chicken broth

  • 1 tablespoon soy sauce

  • 1 teaspoon sesame oil

  • 1/4 teaspoon black pepper

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium heat.

  2. Add the onion and carrot to the skillet and cook, stirring occasionally, until softened, about 5 minutes.

  3. Add the broccoli and snow peas to the skillet and cook, stirring occasionally, until the vegetables are bright green, about 3 minutes.

  4. Add the chicken broth, soy sauce, sesame oil, and black pepper to the skillet and bring to a boil.

  5. Reduce heat to low and simmer for 1 minute.

  6. Add the leftover lo mein noodles to the skillet and stir to combine.

  7. Cook, stirring occasionally, until the noodles are heated through, about 2 minutes.

  8. Serve immediately.

Tips:

  • For a spicier dish, add a pinch of red pepper flakes to the skillet along with the chicken broth.

  • To make this dish ahead of time, cook the noodles and vegetables according to the instructions. Let cool completely, then store in an airtight container in the refrigerator for up to 3 days. When ready to serve, reheat the noodles and vegetables in a skillet over medium heat until heated through. Add the chicken broth, soy sauce, sesame oil, and black pepper and stir to combine. Cook, stirring occasionally, until the noodles are heated through, about 2 minutes.

  • This dish can also be made with other vegetables, such as mushrooms, snap peas, or bell peppers.
