Lite Cretons

Cretons are a traditional Quebecois dish made with pork, onions, and spices. They are often served on toast for breakfast or lunch. While cretons are delicious, they can also be high in fat and calories. This recipe for lite cretons is a healthier version that is still packed with flavor.

Ingredients:

  • 1 pound ground pork

  • 1 onion, chopped

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon dried thyme

  • 1/4 teaspoon dried sage

  • 1/4 cup chicken broth

Instructions:

  1. In a large skillet, brown the ground pork over medium heat. Drain off any excess fat.

  2. Add the onion to the skillet and cook until softened, about 5 minutes.

  3. Stir in the salt, pepper, garlic powder, thyme, and sage. Cook for 1 minute more.

  4. Add the chicken broth to the skillet and bring to a boil. Reduce heat to low and simmer for 30 minutes, or until the mixture is thick and flavorful.

  5. Serve on toast or crackers. Enjoy!

Tips:

  • For a richer flavor, you can add 1/2 cup of grated cheddar cheese to the mixture.

  • If you don't have chicken broth, you can use water. However, the chicken broth will add more flavor to the cretons.

  • You can also add other herbs and spices to the cretons, such as rosemary, oregano, or cayenne pepper.

  • Cretons can be stored in an airtight container in the refrigerator for up to 3 days.

My Story:

I grew up in Quebec, and cretons were a staple food in my household. My mom would make them every Sunday morning, and we would eat them on toast for breakfast. I loved the rich, savory flavor of the cretons, and I still do to this day.

When I moved away from home, I missed cretons terribly. I tried to find them in grocery stores, but they were always too high in fat and calories. So, I decided to make my own lite cretons.

My recipe is a healthier version of the traditional dish, but it still tastes just as good. I use ground pork instead of fatty pork belly, and I add chicken broth instead of cream. The result is a creton that is lower in fat and calories, but still packed with flavor.

I hope you enjoy my recipe for lite cretons. It's a delicious and healthy way to start your day.
