I love potatoes. I love them in all forms: mashed, roasted, fried, you name it. But one of my favorite ways to eat potatoes is twice baked. There's just something about the combination of the crispy skin and the creamy inside that I can't resist.
A few years ago, I was introduced to Middle Eastern twice baked potatoes. They were a revelation. The potatoes were seasoned with a fragrant blend of spices, and they were topped with a creamy yogurt sauce. I was hooked.
Since then, I've made Middle Eastern twice baked potatoes countless times. They're always a hit with my family and friends. And they're so easy to make!
Here's my recipe for Middle Eastern twice baked potatoes:
Ingredients:
4 large russet potatoes
1/4 cup olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup plain yogurt
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1/4 cup crumbled feta cheese
Instructions:
Preheat oven to 400 degrees F (200 degrees C).
Wash potatoes and prick all over with a fork.
Drizzle with olive oil and sprinkle with cumin, coriander, salt, and pepper.
Bake for 1 hour, or until potatoes are soft when pierced with a fork.
Let cool slightly, then cut in half lengthwise.
Scoop out the flesh of the potatoes, leaving a thin shell.
Mash the potato flesh with a fork until smooth.
Stir in yogurt, parsley, mint, and feta cheese.
Season with salt and pepper to taste.
Spoon the potato mixture back into the potato shells.
Bake for an additional 15 minutes, or until heated through.
Serve immediately.
Tips:
For a spicier dish, add a pinch of cayenne pepper to the potato mixture.
If you don't have fresh herbs, you can use 1 teaspoon dried oregano and 1/2 teaspoon dried thyme.
You can also use a different type of cheese, such as cheddar or mozzarella.
