Open Sesame Noodles


Open sesame noodles are a classic Asian dish that is both delicious and easy to make. They are made with a simple sauce of sesame oil, soy sauce, vinegar, and sugar, and can be customized to your liking with a variety of vegetables and protein.

Ingredients:

  • 1 pound dried noodles

  • 1/4 cup sesame oil

  • 1/4 cup soy sauce

  • 1/4 cup rice vinegar

  • 1/4 cup sugar

  • 1 tablespoon grated ginger

  • 1 tablespoon garlic powder

  • 1/2 teaspoon red pepper flakes

  • 1/2 cup chopped vegetables (such as carrots, cucumbers, and bell peppers)

  • 1/2 cup cooked protein (such as chicken, tofu, or shrimp)

  • Cilantro, for garnish (optional)

Instructions:

  1. Cook the noodles according to the package directions. Drain and rinse with cold water.

  2. In a large bowl, whisk together the sesame oil, soy sauce, vinegar, sugar, ginger, garlic powder, and red pepper flakes.

  3. Add the cooked noodles, vegetables, and protein to the bowl with the sauce. Toss to coat.

  4. Garnish with cilantro, if desired.

  5. Serve immediately.

Tips:

  • For a more flavorful sauce, toast the sesame seeds in a dry skillet over medium heat for 1-2 minutes, or until fragrant. Then, grind the toasted sesame seeds in a spice grinder or mortar and pestle.

  • If you don't have rice vinegar, you can use white vinegar or apple cider vinegar.

  • You can use any type of noodles you like for this dish. I like to use thin spaghetti noodles, but you could also use udon noodles, rice noodles, or even ramen noodles.

  • Get creative with the vegetables you add to the dish. I like to use a variety of vegetables, such as carrots, cucumbers, bell peppers, and snap peas. But you could also use broccoli, mushrooms, or even snow peas.

  • If you don't have any cooked protein on hand, you can use tofu or shrimp. Or, you can leave the protein out altogether and make a vegetarian or vegan version of the dish.
