South Beach Stuffed Bell Peppers

South Beach stuffed bell peppers are a delicious and healthy dish that is perfect for a weeknight meal. They are made with a variety of ingredients, including ground turkey, rice, tomatoes, and cheese. The peppers are baked until they are tender and the filling is hot and bubbly.

Ingredients:

  • 4 bell peppers, halved and seeded

  • 1 pound ground turkey

  • 1 onion, chopped

  • 1 green pepper, chopped

  • 1 (15 ounce) can diced tomatoes, undrained

  • 1 cup cooked rice

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup chopped fresh parsley

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).

  2. In a large skillet, brown the ground turkey over medium heat.

  3. Add the onion and green pepper to the skillet and cook until softened.

  4. Drain off any excess fat from the skillet.

  5. Stir in the diced tomatoes, cooked rice, cheddar cheese, parsley, salt, and pepper.

  6. Divide the filling evenly among the bell pepper halves.

  7. Bake in preheated oven for 20-25 minutes, or until the peppers are tender and the filling is hot and bubbly.

  8. Serve immediately.

Tips:

  • For a more flavorful dish, you can add a teaspoon of chili powder or cumin to the filling.

  • If you don't have cheddar cheese, you can substitute another type of cheese, such as mozzarella or Monterey Jack.

  • To make these peppers ahead of time, fill the peppers and then cover them and refrigerate for up to 24 hours. When you're ready to bake, simply remove the peppers from the refrigerator and bake them according to the instructions.

  • These peppers are also great for meal prepping. Simply assemble the peppers and then store them in a sealed container in the refrigerator. When you're ready to eat, simply remove the peppers from the refrigerator and let them come to room temperature for 30 minutes before baking.

Here is a story about the dish:

I first had South Beach stuffed bell peppers when I was on the South Beach Diet. I was looking for a healthy and delicious meal, and these peppers fit the bill perfectly. I was so impressed with how flavorful and satisfying they were that I've made them several times since then.

I've made these peppers with a variety of different fillings, but my favorite is the classic combination of ground turkey, rice, tomatoes, and cheese. I like to add a teaspoon of chili powder to the filling for a little bit of extra flavor. I've also made these peppers with a vegetarian filling, using ground turkey substitute and vegetables instead of meat.

These peppers are a great dish for a weeknight meal. They're easy to make and they're a great way to get your daily dose of vegetables. I hope you enjoy this recipe!

Here are some additional tips and tricks:

  • To get the most flavor out of the bell peppers, roast them before filling them. Preheat oven to 400 degrees F (200 degrees C). Place bell peppers on a baking sheet, cut side up. Roast for 20-25 minutes, or until the peppers are tender and the skin is slightly charred.

  • To prevent the filling from falling out of the bell peppers, you can line the peppers with cheesecloth or parchment paper before filling them.

  • To make these peppers even more delicious, you can top them with a dollop of sour cream or guacamole.
