Sticky chicken dumplings are a delicious and easy-to-make dish that is perfect for a weeknight meal. They are made with a simple dough and a flavorful filling, and they are cooked in a flavorful sauce.
Ingredients:
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup water, plus more as needed
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon ginger, grated
1 teaspoon garlic, minced
1/2 cup chicken broth
1/4 cup brown sugar
1 tablespoon cornstarch
1/4 cup chopped green onions
Instructions:
In a large bowl, whisk together the flour and salt. Add the water and stir until a dough forms. If the dough is too dry, add more water, 1 tablespoon at a time.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. Cover the dough with plastic wrap and let it rest for 30 minutes.
While the dough is resting, make the filling. In a large bowl, combine the chicken, soy sauce, sesame oil, ginger, and garlic. Mix well to combine.
After the dough has rested, roll it out on a lightly floured surface to a thickness of 1/8 inch. Cut the dough into 3-inch circles.
Place a heaping teaspoon of filling in the center of each circle of dough. Fold the dough over the filling and pinch the edges together to seal.
In a large pot, bring the chicken broth to a boil. Add the dumplings and cook for 5-7 minutes, or until they float to the top.
While the dumplings are cooking, make the sauce. In a small bowl, whisk together the brown sugar, cornstarch, and 2 tablespoons of water.
When the dumplings are cooked, add the sauce to the pot and stir until the dumplings are coated in the sauce. Bring the sauce to a boil, then reduce heat to low and simmer for 2-3 minutes, or until the sauce has thickened.
Serve the dumplings immediately, garnished with green onions.
Tips:
To make the dumplings ahead of time, you can assemble them and then freeze them on a baking sheet. Once they are frozen, you can transfer them to a freezer bag and store them for up to 2 months. When you are ready to cook, simply thaw the dumplings in the refrigerator overnight and then cook them according to the instructions.
If you don't have chicken broth, you can use water. However, the dumplings will be more flavorful if you use chicken broth.
You can add other vegetables to the filling, such as carrots, celery, or mushrooms.
