I'm a big fan of dips. I love the way they bring people together, and I love the way they can be customized to everyone's taste. But my favorite dip of all is the Man's Taco Dip. It's simple to make, but it's always a crowd-pleaser.
Ingredients:
1 pound ground beef
1 onion, chopped
1 green bell pepper, chopped
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn, drained
1 packet taco seasoning mix
1 cup shredded cheddar cheese
1 cup sour cream
1/2 cup salsa
1/2 cup guacamole
Tortilla chips, for serving
Instructions:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
Add onion and green pepper to the skillet and cook until softened.
Stir in black beans, corn, taco seasoning mix, and 1 cup of the shredded cheese.
Pour mixture into a greased 9x13 inch baking dish.
In a small bowl, combine sour cream, salsa, and guacamole.
Spread sour cream mixture over the top of the beef mixture.
Sprinkle with the remaining shredded cheese.
Bake for 20 minutes, or until cheese is melted and bubbly.
Serve with tortilla chips.
Tips:
For a spicier dip, add a 1/4 cup of hot sauce to the beef mixture.
To make the dip ahead of time, prepare the dip up to step 7 and cover it tightly. Refrigerate for up to 24 hours. When ready to serve, bake in a preheated oven for 20 minutes, or until cheese is melted and bubbly.
Serve the dip with your favorite toppings, such as chopped tomatoes, lettuce, and sour cream.
