Duffins: The Best of Both Worlds



Duffins are a delicious hybrid of donuts and muffins. They have the fluffy texture of a muffin, but the sweet, glazed flavor of a donut. Duffins are perfect for breakfast, brunch, or a snack.

I first heard about duffins a few years ago, and I was immediately intrigued. I love donuts, but I also love muffins. The idea of combining the two seemed like a match made in heaven.

I finally got around to making duffins a few weeks ago, and I was not disappointed. They were even better than I had imagined. The muffins were light and fluffy, and the glaze was perfectly sweet. I couldn't stop eating them!

Ingredients:

  • 1 cup all-purpose flour

  • 1/2 cup sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup milk

  • 1/4 cup vegetable oil

  • 1 egg

  • 1 teaspoon vanilla extract

  • Glaze:

  • 1 cup powdered sugar

  • 1/4 cup milk

  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12-cup muffin tin.

  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together milk, oil, egg, and vanilla extract.

  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

  5. Fill each muffin cup 2/3 full.

  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  7. While the muffins are baking, make the glaze. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.

  8. Let the muffins cool for a few minutes before glazing.

  9. Serve and enjoy!

Tips:

  • For a more flavorful glaze, add a pinch of cinnamon or nutmeg.

  • If you don't have a muffin tin, you can bake the duffins in a greased 9x13 inch baking pan. Just bake for a few minutes longer, or until a toothpick inserted into the center comes out clean.

  • Duffins are best served fresh, but they can also be stored in an airtight container at room temperature for up to 2 days.

Variations:

  • Chocolate duffins: Add 1/2 cup of cocoa powder to the dry ingredients.

  • Blueberry duffins: Fold in 1 cup of blueberries to the batter.

  • Lemon duffins: Add 1 tablespoon of lemon zest and 1 teaspoon of lemon juice to the batter.
