Ingredients
1 pound beef stew meat, cut into 1-inch cubes
1 tablespoon ghee or vegetable oil
1 large onion, chopped
2 cloves garlic, minced
1 inch piece of ginger, peeled and minced
1 tablespoon curry powder
1 teaspoon ground turmeric
1 teaspoon ground coriander
1/2 teaspoon cumin powder
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup coconut milk
1/2 cup water
1/4 cup chopped cilantro
Instructions
Heat the ghee or oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute more.
Add the curry powder, turmeric, coriander, cumin, cayenne pepper, salt, and black pepper to the pot and cook for 1 minute more, stirring constantly.
Add the beef to the pot and cook until browned on all sides.
Add the coconut milk and water to the pot and bring to a boil. Reduce heat to low, cover, and simmer for 1-2 hours, or until the beef is tender.
Stir in the cilantro and serve with rice or roti bread.
Tips
If you don't have ghee, you can substitute vegetable oil.
If you don't have coconut milk, you can substitute evaporated milk or heavy cream.
If you don't like spicy food, you can reduce the amount of cayenne pepper.
You can add other vegetables to the curry, such as potatoes, carrots, or bell peppers.
