Heart-Healthy Goulash

Goulash is a classic dish that is often made with ground beef, onions, and tomatoes. However, this traditional recipe can be high in saturated fat and sodium. This heart-healthy version of goulash uses lean ground turkey, low-sodium broth, and whole-wheat pasta. It is also lower in calories and fat than the traditional recipe, but it is still just as delicious.

Here is the recipe for heart-healthy goulash:

Ingredients:

  • 1 pound lean ground turkey

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 1 (14.5 ounce) can diced tomatoes, undrained

  • 1 (10.75 ounce) can low-sodium condensed tomato soup

  • 1 teaspoon dried thyme

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 cup whole-wheat pasta

  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.

  2. In a large skillet, brown the ground turkey over medium heat. Drain off any excess fat.

  3. Add the onion, carrots, and celery to the skillet and cook until softened, about 5 minutes.

  4. Stir in the diced tomatoes, tomato soup, thyme, salt, and pepper. Bring to a simmer and cook for 5 minutes, or until thickened.

  5. Meanwhile, cook the pasta according to the package directions.

  6. Pour the turkey mixture into a 9x13 inch baking dish.

  7. Top with the cooked pasta and sprinkle with Parmesan cheese.

  8. Bake for 20 minutes, or until the pasta is heated through and the cheese is melted.

  9. Serve hot and enjoy!

Tips and tricks:

  • To make the dish even healthier, you can add additional vegetables, such as mushrooms, peas, or corn.

  • You can also use a different type of pasta, such as penne or rotini.

  • If you don't have time to make the whole dish from scratch, you can use a store-bought sauce. Just be sure to choose a sauce that is low in sodium and fat.

  • To make the dish ahead of time, prepare the filling and pour it into the baking dish. Cover and refrigerate for up to 24 hours. When you are ready to bake, remove the dish from the refrigerator and let it sit at room temperature for 30 minutes. Then, top with the cooked pasta and Parmesan cheese and bake as directed.
