I love Italian food. I love the flavors, the spices, the fresh ingredients. So when I was looking for a new recipe to try, I decided to put an Italian spin on a classic dish: pork chops.
These Italianized pork chops are so easy to make, and they're incredibly flavorful. The chops are coated in a simple sauce made with olive oil, garlic, tomatoes, and Italian seasoning. They're then baked in the oven until they're cooked through and the sauce is thickened.

Ingredients
4 boneless, pork chops
1 tablespoon olive oil
1/2 cup chopped onion

1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup tomato sauce
1 tablespoon Italian seasoning
Salt and pepper to taste
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Season pork chops with salt and pepper.
Heat olive oil in a large skillet over medium heat.
Add pork chops to skillet and cook for 2-3 minutes per side, or until browned.
Remove pork chops from skillet and set aside.
Add onion and garlic to skillet and cook for 2-3 minutes, or until softened.
Add diced tomatoes, tomato sauce, and Italian seasoning to skillet.
Bring mixture to a boil, then reduce heat to low and simmer for 10 minutes, or until sauce has thickened.
Return pork chops to skillet and cook for 10-15 minutes, or until pork chops are cooked through.
Serve immediately.
Tips and Tricks
For a richer flavor, use a combination of olive oil and butter in the skillet.
If you don't have Italian seasoning, you can substitute a mixture of dried oregano, basil, and thyme.
To make the sauce ahead of time, cook it according to the instructions, then let it cool completely. Store the sauce in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, reheat the sauce over low heat until warmed through.
These pork chops are also great on the grill. Preheat grill to medium heat. Grill pork chops for 5-7 minutes per side, or until cooked through.
