Italianized Pork Chops

I love Italian food. I love the flavors, the spices, the fresh ingredients. So when I was looking for a new recipe to try, I decided to put an Italian spin on a classic dish: pork chops.

These Italianized pork chops are so easy to make, and they're incredibly flavorful. The chops are coated in a simple sauce made with olive oil, garlic, tomatoes, and Italian seasoning. They're then baked in the oven until they're cooked through and the sauce is thickened.

I like to serve these pork chops with a side of pasta or rice. They're also great with a simple salad.

Here's the recipe:

Ingredients

  • 4 boneless, pork chops

  • 1 tablespoon olive oil

  • 1/2 cup chopped onion

  • 2 cloves garlic, minced

  • 1 (14.5 ounce) can diced tomatoes, undrained

  • 1/2 cup tomato sauce

  • 1 tablespoon Italian seasoning

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).

  2. Season pork chops with salt and pepper.

  3. Heat olive oil in a large skillet over medium heat.

  4. Add pork chops to skillet and cook for 2-3 minutes per side, or until browned.

  5. Remove pork chops from skillet and set aside.

  6. Add onion and garlic to skillet and cook for 2-3 minutes, or until softened.

  7. Add diced tomatoes, tomato sauce, and Italian seasoning to skillet.

  8. Bring mixture to a boil, then reduce heat to low and simmer for 10 minutes, or until sauce has thickened.

  9. Return pork chops to skillet and cook for 10-15 minutes, or until pork chops are cooked through.

  10. Serve immediately.

Tips and Tricks

  • For a richer flavor, use a combination of olive oil and butter in the skillet.

  • If you don't have Italian seasoning, you can substitute a mixture of dried oregano, basil, and thyme.

  • To make the sauce ahead of time, cook it according to the instructions, then let it cool completely. Store the sauce in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, reheat the sauce over low heat until warmed through.

  • These pork chops are also great on the grill. Preheat grill to medium heat. Grill pork chops for 5-7 minutes per side, or until cooked through.

Enjoy!
