It's Greek to Me: Baked Feta Chicken



I love Greek food. The flavors are so fresh and vibrant, and the dishes are always so satisfying. One of my favorite Greek dishes is baked feta chicken. It's simple to make, but it's packed with flavor. The chicken is juicy and tender, the feta is salty and creamy, and the tomatoes are sweet and juicy. The whole dish is baked in a flavorful tomato sauce, and it's topped with a sprinkling of fresh herbs.

I first had baked feta chicken when I was on vacation in Greece. I was staying in a small village on the coast, and I ate it at a local taverna. It was love at first bite! I had to try to recreate it at home, and I've been making it ever since.

This recipe is my own adaptation of the traditional Greek dish. I've made a few changes to make it easier to make at home. I use boneless, skinless chicken breasts instead of whole chickens, and I use canned diced tomatoes instead of fresh tomatoes. I also add a little bit of olive oil and lemon juice to the sauce, which gives it an extra layer of flavor.

This dish is perfect for a weeknight meal. It's quick and easy to make, and it's sure to please everyone at the table. It's also a great dish to make for a party. It's easy to transport, and it can be served hot or cold.

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 1 (10.75-ounce) can diced tomatoes, undrained

  • 1/4 cup olive oil

  • 1/4 cup lemon juice

  • 1/2 cup crumbled feta cheese

  • 1/4 cup chopped fresh parsley

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).

  2. Grease a 9x13 inch baking dish.

  3. Place chicken breasts in prepared baking dish.

  4. In a small bowl, combine diced tomatoes, olive oil, lemon juice, feta cheese, parsley, salt, and pepper.

  5. Pour tomato mixture over chicken breasts.

  6. Bake in preheated oven for 30 minutes, or until chicken is cooked through and tomatoes are bubbly.

  7. Serve hot or cold.

Tips:

  • You can also use bone-in, skin-on chicken breasts for this recipe. Just increase the baking time to 40 minutes.

  • If you don't have fresh parsley, you can use dried parsley instead. Just use 1/2 teaspoon of dried parsley.

  • You can also add other vegetables to this dish, such as zucchini, squash, or onions. Just add them to the baking dish along with the chicken and tomatoes.

  • Serve with a side of rice, pasta, or potatoes.
