Lemon chicken and potatoes is a classic dish that is perfect for a weeknight meal. It's easy to make, and it's always a crowd-pleaser.
The key to this dish is to use high-quality ingredients. I like to use bone-in, skin-on chicken thighs, because they add so much flavor to the dish. And I always use Yukon Gold potatoes, because they hold their shape well and they have a nice, creamy texture.
The other important thing to remember is to not overcook the chicken. Chicken thighs are best when they are cooked until they are just cooked through, but still slightly pink in the center.
This dish is also very versatile. You can add other vegetables to it, such as carrots, onions, or mushrooms. And you can also change up the seasonings to suit your taste. I like to add a little bit of garlic powder, onion powder, and paprika to my chicken, but you can use whatever you like.
Ingredients:
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon paprika
1 pound Yukon Gold potatoes, quartered
1 lemon, sliced
Instructions:
Preheat the oven to 400 degrees F (200 degrees C).
In a large bowl, combine the chicken, olive oil, salt, pepper, garlic powder, onion powder, and paprika. Toss to coat.
Spread the chicken and potatoes in a single layer on a baking sheet.
Roast for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
Garnish with lemon slices and serve.
Tips:
For a more intense lemon flavor, you can zest the lemon before slicing it.
If you don't have a baking sheet, you can use a large skillet. Just be sure to cook the chicken and potatoes in batches so that they don't crowd the pan.
You can also cook this dish on the grill. Just preheat your grill to medium heat and cook the chicken and potatoes for 20-25 minutes, or until they are cooked through.
Enjoy!
Here's a little story about how I came to love lemon chicken and potatoes:
I grew up in a small town in the Midwest. My mom was a great cook, and she made lemon chicken and potatoes all the time. It was one of my favorite dishes.
I remember coming home from school on a cold winter day and smelling the delicious aroma of lemon chicken and potatoes cooking in the oven. I would run into the kitchen and my mom would give me a big hug and a plate of food.
I loved the combination of the juicy, flavorful chicken and the buttery, creamy potatoes. And the lemon sauce was the perfect finishing touch. It was always so comforting and delicious.
I still make lemon chicken and potatoes for my family and friends. It's a dish that always brings back fond memories of my childhood.
I hope you enjoy this recipe!
