Magic Coleslaw

Coleslaw is a classic side dish that is often served with barbecue, fried chicken, or fish. It is made with shredded cabbage, carrots, and mayonnaise. Magic coleslaw is a variation on the classic recipe that adds a special ingredient that makes it extra delicious.

Ingredients:

  • 1 head cabbage, shredded

  • 2 carrots, shredded

  • 1/2 cup mayonnaise

  • 1/4 cup apple cider vinegar

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 cup grated Parmesan cheese

Instructions:

  1. In a large bowl, combine the cabbage, carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper.

  2. Toss to coat.

  3. Chill in the refrigerator for at least 30 minutes before serving.

  4. Sprinkle with Parmesan cheese before serving.

Tips:

  • For a crisper coleslaw, shred the cabbage and carrots on the coarsest setting of your food processor.

  • If you don't have apple cider vinegar, you can use white vinegar or balsamic vinegar.

  • You can add other vegetables to your coleslaw, such as celery, onion, or bell pepper.

  • To make your own mayonnaise, whisk together 1 egg yolk, 1 tablespoon Dijon mustard, and 1/2 teaspoon salt. Slowly whisk in 1 cup vegetable oil until the mayonnaise is thick and creamy.

  • To make your own Parmesan cheese, grate Parmesan cheese from a block.

Story:

I first had magic coleslaw at a barbecue restaurant when I was in college. I was immediately hooked by the creamy, tangy, and slightly sweet flavor. I asked the waiter what was in the coleslaw, and he told me that it was a secret recipe.

I tried to recreate the magic coleslaw at home, but I couldn't quite get the flavor right. I tried different combinations of mayonnaise, apple cider vinegar, sugar, salt, and pepper, but nothing tasted quite like the coleslaw from the barbecue restaurant.

One day, I was watching a cooking show and the chef mentioned that a little bit of grated Parmesan cheese can add a magic touch to coleslaw. I decided to give it a try, and it was the perfect addition! The Parmesan cheese added a salty, nutty flavor that really made the coleslaw sing.

Now, I make magic coleslaw all the time. It's a hit with my family and friends, and it's always the first dish to disappear at potlucks.

So next time you're looking for a delicious and easy side dish, try magic coleslaw. You won't be disappointed!
