Instructions
In a medium bowl, combine the chicken, cornstarch, salt, and pepper. Toss to coat.
Heat the oil in a large skillet over medium heat. Add the chicken and cook until browned on all sides. Remove from the pan and set aside.
Add the onion and garlic to the skillet and cook until softened.
Stir in the orange juice, soy sauce, brown sugar, and 1 tablespoon cornstarch. Bring to a boil, then reduce heat and simmer for 5 minutes.
Stir in the water and bring to a boil. Reduce heat and simmer for 1 minute more.
Return the chicken to the skillet and stir to coat in the sauce.
Cook for 2-3 minutes more, or until the chicken is cooked through.
Garnish with green onions and serve over rice.
Tips
For a crispier chicken, you can dredge the chicken in flour before coating it in cornstarch.
If you don't have orange juice, you can use apple juice or pineapple juice instead.
