Ingredients:
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
1 egg
1 tablespoon melted butter
2 slices American cheese
2 slices bacon or sausage
1 egg, fried
Instructions:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the milk, egg, and melted butter.
Add the wet ingredients to the dry ingredients and whisk until just combined.
Heat a griddle or large skillet over medium heat.
Add a small amount of butter or oil to the griddle.
Pour 1/4 cup of batter onto the griddle for each pancake.
Cook the pancakes for 2-3 minutes per side, or until golden brown.
While the pancakes are cooking, cook the bacon or sausage.
To assemble the sandwich, place a pancake on a plate.
Top with a slice of cheese, bacon or sausage, and a fried egg.
Top with another pancake and drizzle with maple syrup.
Serve immediately and enjoy!
Tips:
For a sweeter sandwich, add a little more sugar to the batter.
For a savory sandwich, add some chopped onions or peppers to the batter.
To make the sandwich ahead of time, assemble it without the maple syrup. Cover and refrigerate for up to 24 hours. When you're ready to eat, heat the sandwich in a toaster oven or on a griddle until the cheese is melted and the pancake is warm.
