McGriddle Pancakes Breakfast Sandwich



Ingredients:

  • 1 cup all-purpose flour

  • 1 tablespoon sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup milk

  • 1 egg

  • 1 tablespoon melted butter

  • 2 slices American cheese

  • 2 slices bacon or sausage

  • 1 egg, fried

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, whisk together the milk, egg, and melted butter.

  3. Add the wet ingredients to the dry ingredients and whisk until just combined.

  4. Heat a griddle or large skillet over medium heat.

  5. Add a small amount of butter or oil to the griddle.

  6. Pour 1/4 cup of batter onto the griddle for each pancake.

  7. Cook the pancakes for 2-3 minutes per side, or until golden brown.

  8. While the pancakes are cooking, cook the bacon or sausage.

  9. To assemble the sandwich, place a pancake on a plate.

  10. Top with a slice of cheese, bacon or sausage, and a fried egg.

  11. Top with another pancake and drizzle with maple syrup.

  12. Serve immediately and enjoy!

Tips:

  • For a sweeter sandwich, add a little more sugar to the batter.

  • For a savory sandwich, add some chopped onions or peppers to the batter.

  • To make the sandwich ahead of time, assemble it without the maple syrup. Cover and refrigerate for up to 24 hours. When you're ready to eat, heat the sandwich in a toaster oven or on a griddle until the cheese is melted and the pancake is warm.

  • Instead of American cheese, use your favorite type of cheese.

  • Instead of bacon or sausage, use ham, turkey, or tofu.
