Not Too Sweet Sweet Potatoes

Sweet potatoes are a delicious and versatile vegetable that can be used in a variety of dishes. They are a good source of vitamins, minerals, and fiber. However, sweet potatoes can also be too sweet for some people. Here is a recipe for not too sweet sweet potatoes that is perfect for those who want a more savory dish.

Ingredients:

  • 2 large sweet potatoes, peeled and diced

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit.

  2. In a large bowl, toss together the sweet potatoes, olive oil, salt, pepper, garlic powder, and onion powder.

  3. Spread the sweet potatoes in a single layer on a baking sheet.

  4. Bake for 20-25 minutes, or until the sweet potatoes are tender and slightly browned.

  5. Serve immediately.

Tips:

  • For a spicier dish, add a pinch of cayenne pepper to the seasoning mixture.

  • For a more flavorful dish, add 1/4 cup of chopped fresh herbs, such as rosemary, thyme, or sage, to the seasoning mixture.

  • To make this dish ahead of time, roast the sweet potatoes and then store them in an airtight container in the refrigerator for up to 3 days. When ready to serve, reheat the sweet potatoes in the oven or microwave until warmed through.

Variations:

  • You can also use this recipe to make sweet potato fries. Simply cut the sweet potatoes into thin strips and follow the same instructions.

  • You can also add other vegetables to this dish, such as carrots, onions, or peppers.

  • To make a sweet potato casserole, top the roasted sweet potatoes with a mixture of melted butter, brown sugar, and marshmallows. Bake for an additional 5-10 minutes, or until the marshmallows are golden brown.
