The Frugal Gourmet's Southern Barbecue Sauce

Off the Boat Sicilian Pasta Sauce

I'm a big fan of Sicilian food. The flavors are so bright and fresh, and the food is always so hearty and satisfying. This pasta sauce is a perfect example of Sicilian cuisine at its best.

It's made with simple ingredients, but it's packed with flavor. The tomatoes are cooked down until they're sweet and flavorful, and the onions and garlic add a touch of sweetness and depth. The herbs and spices are used sparingly, but they add a touch of complexity that really elevates the dish.

This sauce is perfect for a quick weeknight meal. It's also great for entertaining. It's hearty enough to feed a crowd, and it's sure to please even the pickiest eaters.

Ingredients

  • 1 tablespoon olive oil

  • 1/2 cup chopped onion

  • 2 cloves garlic, minced

  • 1 (28-ounce) can whole peeled tomatoes, crushed by hand

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon dried basil

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

  2. Add the tomatoes, oregano, basil, salt, and pepper. Bring to a simmer and cook for 30 minutes, or until the sauce has thickened and reduced slightly.

  3. Serve over your favorite pasta.

Tips and Tricks

  • For a smoother sauce, puree it in a blender or food processor until smooth.

  • Add a splash of red wine to the sauce for a deeper flavor.

  • Top with grated Parmesan cheese for an extra touch of decadence.

My Story

I first had this pasta sauce when I was visiting family in Sicily. I was immediately blown away by the flavors. The tomatoes were so sweet and juicy, and the herbs and spices were perfectly balanced. I knew I had to learn how to make it myself.

I asked my grandmother for her recipe, and she was happy to share it with me. I've been making this sauce ever since, and it's always a hit with my family and friends.

I hope you enjoy this recipe!
