The Frugal Gourmet's Southern Barbecue Sauce

Orange Soup

Orange soup is a delicious and refreshing soup that is perfect for a cold winter day. It is also a great way to get your daily dose of vitamin C.

This soup is made with simple ingredients, but it is full of flavor. The oranges add a tart and citrusy flavor, while the chicken broth adds a richness and depth of flavor. The soup is also thickened with a bit of cornstarch, which gives it a smooth and creamy texture.

This soup is very easy to make. Simply saute some onions and garlic in olive oil, then add the chicken broth, oranges, and cornstarch. Bring the soup to a boil, then reduce the heat and simmer for 15 minutes, or until the oranges are tender. Puree the soup in a blender or food processor until smooth, then season with salt and pepper to taste.

This soup can be served hot or cold. It is also a great soup to freeze. To freeze the soup, simply cool it completely, then pour it into freezer-safe containers. The soup can be frozen for up to 3 months.

Ingredients:

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 4 cups chicken broth

  • 3 oranges, peeled and segmented

  • 1 tablespoon cornstarch

  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

  2. Add the chicken broth, oranges, and cornstarch to the pot. Bring the soup to a boil, then reduce the heat and simmer for 15 minutes, or until the oranges are tender.

  3. Puree the soup in a blender or food processor until smooth. Season with salt and pepper to taste.

  4. Serve hot or cold.

Tips and Tricks:

  • For a richer flavor, you can add a tablespoon of butter to the soup before adding the chicken broth.

  • You can also add other vegetables to the soup, such as carrots, celery, or potatoes.

  • If you don't have cornstarch, you can use a tablespoon of flour instead.

  • To make the soup ahead of time, simply prepare the soup as directed, then let it cool completely. Cover the soup and refrigerate for up to 24 hours. When you are ready to serve, reheat the soup over medium heat until warmed through.
