I love Sri Lankan cuisine. It's full of bold flavors and aromatic spices, and it's always so fresh and flavorful. One of my favorite Sri Lankan dishes is rathu isso curry, a red prawn curry that's both spicy and sweet.
This curry is made with fresh prawns, onions, garlic, ginger, curry leaves, lemongrass, turmeric, chili powder, paprika, and coconut milk. The prawns are cooked in a fragrant curry sauce until they're tender and pink, and the whole dish is finished off with a squeeze of lemon juice.
Rathu isso curry is traditionally served with rice and roti, but it's also delicious with naan or even just a side of vegetables. It's a great dish to make for a special occasion, or for a casual weeknight meal.
Ingredients:
1 pound fresh prawns, peeled and deveined
1 medium onion, chopped
3 garlic cloves, minced
1 teaspoon grated ginger
10 curry leaves
1 stalk lemongrass, bruised
1/2 teaspoon ground turmeric
1 1/2 teaspoons chili powder
2 teaspoons paprika
1 teaspoon salt
2 cups coconut milk
Juice of 1 lemon
Instructions:
Heat a large pot or Dutch oven over medium heat. Add the prawns, onion, garlic, ginger, curry leaves, and lemongrass. Cook, stirring occasionally, until the onion is softened, about 5 minutes.
Add the turmeric, chili powder, paprika, and salt. Cook, stirring constantly, for 1 minute more.
Add the coconut milk and bring to a simmer. Reduce heat to low and simmer for 10 minutes, or until the prawns are cooked through.
Stir in the lemon juice and serve with rice, roti, naan, or vegetables.
Tips:
For a more authentic flavor, use Sri Lankan curry powder.
If you can't find curry leaves, you can substitute fresh cilantro.
To make the curry less spicy, reduce the amount of chili powder.
Serve the curry with a side of your favorite chutney.
