The Frugal Gourmet's Southern Barbecue Sauce

Ritzy Chicken

Ritzy Chicken is a delicious and easy dish that is perfect for a weeknight meal. It's made with boneless, skinless chicken breasts that are coated in a creamy Ritz cracker sauce. The chicken is then baked in the oven until it is cooked through and the sauce is bubbly and golden brown.

This dish is so easy to make, and it's always a crowd-pleaser. The chicken is juicy and flavorful, and the Ritz cracker sauce is the perfect combination of creamy, crunchy, and cheesy.

I like to serve Ritzy Chicken with a side of rice or pasta. You can also serve it with a side salad or some roasted vegetables.

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1/2 cup butter, melted

  • 1/2 cup mayonnaise

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup crushed Ritz crackers

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. In a large bowl, combine the butter, mayonnaise, Parmesan cheese, Ritz crackers, salt, and pepper.

  3. Dip each chicken breast in the sauce mixture, coating both sides evenly.

  4. Place the chicken breasts in a baking dish and bake for 25-30 minutes, or until cooked through.

  5. Serve immediately.

Tips:

  • For a more intense Ritz cracker flavor, you can use whole Ritz crackers instead of crushed ones.

  • If you don't have Parmesan cheese, you can use another type of hard cheese, such as cheddar or Swiss.

  • You can also add other ingredients to the sauce mixture, such as chopped onions, bell peppers, or mushrooms.

Here's a little story about how I came to love Ritzy Chicken:

I first had Ritzy Chicken when I was in college. My roommate made it for us one night, and I was immediately hooked. The chicken was so juicy and flavorful, and the Ritz cracker sauce was the perfect combination of creamy, crunchy, and cheesy.

I started making Ritzy Chicken for my friends and family, and it always got rave reviews. It's now one of my go-to dishes for any occasion.

I hope you enjoy this recipe!

Here are some additional tips and tricks for making Ritzy Chicken:

  • To make sure the chicken is cooked through, insert a meat thermometer into the thickest part of the breast. The chicken is done when the internal temperature reaches 165 degrees F (74 degrees C).

  • To prevent the chicken from sticking to the baking dish, coat the dish with nonstick cooking spray.

  • If you don't have a baking dish, you can cook the chicken in a large skillet. Just be sure to cook the chicken in batches so that it doesn't crowd the pan.

  • Ritzy Chicken can be served hot or cold. It's also a great dish to pack for lunch or dinner.
