I've always been fascinated by Spanish culture. The language, the food, the music, the art... it's all so vibrant and alive. One of my favorite Spanish dishes is tortilla española, a simple yet delicious omelette made with potatoes, onions, and eggs.
I first tried tortilla española when I was in Madrid a few years ago. I was sitting at a tapas bar, and I saw it on the menu. I had never heard of it before, but it sounded interesting, so I ordered it.
I was blown away by how good it was! The potatoes were cooked perfectly, the onions were sweet and caramelized, and the eggs were light and fluffy. It was the perfect combination of flavors and textures.
Since then, I've made tortilla española many times at home. It's a great dish to make for a quick and easy meal. It's also perfect for parties or potlucks.
Here is my recipe for tortilla española:
Ingredients:
6 large eggs
1 pound Yukon Gold potatoes, peeled and thinly sliced
1/2 cup olive oil
1/2 onion, thinly sliced
Salt and pepper to taste
Instructions:
Heat the olive oil in a large skillet over medium heat. Add the potatoes and cook, stirring occasionally, until they are golden brown and tender, about 15 minutes.
Add the onion to the skillet and cook, stirring occasionally, until softened, about 5 minutes.
Season with salt and pepper to taste.
In a bowl, whisk together the eggs.
Add the potatoes and onions to the eggs and stir to combine.
Heat the same skillet over medium heat. Add the egg mixture and cook, stirring occasionally, until the bottom is set, about 3 minutes.
Use a spatula to flip the omelette. Cook for an additional 2 minutes, or until the omelette is set.
Cut the omelette into wedges and serve immediately.
Tips:
Use Yukon Gold potatoes for the best flavor and texture.
Don't overcook the potatoes, or they will be mushy.
Add the onion to the skillet when the potatoes are about halfway cooked. This will help to prevent the onion from burning.
Season the omelette with salt and pepper to taste.
If you want a crispy omelette, cook it in a non-stick skillet over medium-high heat.
Serve the omelette immediately, or it will become tough.
Enjoy!
Here are some additional tips and tricks for making tortilla española:
If you don't have a non-stick skillet, you can grease the skillet with a little bit of olive oil before adding the egg mixture.
If you want a more flavorful omelette, you can add a pinch of smoked paprika or cayenne pepper to the egg mixture.
You can also add other ingredients to the omelette, such as chorizo, ham, or cheese.
Tortilla española is traditionally served at room temperature, but it's also delicious hot.
I hope you enjoy this recipe for tortilla española! It's a delicious and easy-to-make dish that's perfect for any occasion.
