Vegan Oatmeal Cookies: A Special Treat for Everyone



I've always loved oatmeal cookies. They're chewy, flavorful, and perfect for a quick snack or dessert. But when I went vegan, I had to find a new way to enjoy them.

Ingredients:

  • 1 cup rolled oats

  • 1/2 cup all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup vegan butter, softened

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 1/4 cup almond milk

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. In a large bowl, combine oats, flour, baking soda, and salt.

  3. In a separate bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

  4. Beat in vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Stir in almond milk until dough forms.

  7. Drop by rounded tablespoons onto ungreased baking sheets.

  8. Bake for 10-12 minutes, or until golden brown.

  9. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Tips:

  • For a chewier cookie, chill the dough for 30 minutes before baking.

  • For a crispier cookie, bake for an additional 1-2 minutes.

  • Add 1/2 cup of chocolate chips or dried fruit to the dough for a special treat.
